Guest Post: Mommas Like Me

I am so super excited to have the fantastic Lacee from Mommas Like Me here today. So is so lovely and sweet, not to mention she has the best peanut butter and chocolate recipes. She had me at hello!

Hi everyone!
I am so excited and honored to be posting here on Em's blog today! Em and I bonded over THIS recipe and our love for the combination of all things chocolate and peanut butter. She asked if I would share another peanut butter/chocolate recipe on her blog and of course I accepted...I mean who could say no to such a sweetie pie? So here's what I be sharing with all you lovely ladies today...

Chocolate Peanut Butter Surprise Cookies

Before I begin with the recipe, let me just take a sec to introduce myself. My name is Lacee Griffith and I am a 29 year old stay-at-home momma to my silly little 5 year old son and a wife of 10 years to my awesome hubby. Here are a few pic's of my little fam bam...

Alrighty, lets whip up some delicious treats shall we? This recipe is one of my Pinterest finds...I'm slightly addicted to Pinterest and have more recipes pinned than I'll probably ever have time to make...but this is one that I plan on making over and over again...they're THAT good!

Here's What You'll Need:

1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup granulated sugar {plus more for rolling}
1/2 cup packed brown sugar
1/2 cup unsalted butter, softened
1 cup creamy peanut butter, divided
1 teaspoon vanilla extract
1 egg
3/4 cup powdered sugar

Preheat oven to 375* F. Line a baking sheet with parchment paper; set aside.

In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, beat together sugars, butter, and 1/4 cup of peanut butter until light and fluffy. Add the vanilla and egg, beating to combine. Stir in the flour mixture a little at a time until well combined. Set aside.

In a medium bowl, mix together powdered sugar and remaining 3/4 cup of peanut butter until smooth.

Pull off a heaping tablespoon {about the size of a golf ball} of cookie dough and flatten with your hands. Take about 1 teaspoon of the peanut butter mixture and place it in the center of the chocolate dough. Wrap the chocolate dough around the peanut butter center, pressing to seal. Roll the cookie into a ball.

Roll the cookie ball in sugar then place on the prepared cookie sheet 2 inches apart. Using the bottom of a glass, flatten each cookie to about a 1/2 inch thickness.

Bake in preheated oven for 7 to 9 minutes. Let stand on the baking sheet for 2 minutes, then transfer to a wire rack. Makes approx. 2 dozen cookies.

These cookies will have you raiding your cookie jar over and over again! I hope you try them and like them as much as me and my boys did!
