The recipe I have for you today is one of my kids all time faves, Mini Cheeseburgers. Yum! And one I shared over at Miss Mommy, not too long ago.
Here's what you will need
1/2 an onion finely diced
1/2 carrot grated - I am all for sneaking extra veg into my kids whenever I can
1 tablespoon tomato sauce/ketchup
1 tablespoon barbecue sauce
1/4 cup breadcrumbs
Salt and pepper
Flour for coating the patties
6 large burger buns
Bacon - optional
1/2 onion finely sliced - optional
Your choice of sauce and/or mustard
Got everything? Awesome lets get cooking.
Put all your ingredients into a large bowl and combine. Easiest way is with you hands. Don't forget to take off your rings first. Divide the combined mince into 12 even sized patties. Coat each patty in flour.
Heat up your fry pan with a light layer of cooking oil.
Grab out a large round cookie cutter and cut out two mini buns from each large one. You should get 12.
Don't waste all the offcuts of bun, pop into the freezer to use for stuffing's etc.
Once the patties are half done, add the bacon and onion to the pan.
While that's cooking away pop cheese on the buns. As much or as little as you like.
By now you are probably getting thirsty so fill up your pineapple with loads of ice and top it with coke. What you don't drink out of a pineapple cup? Oops my bad, but you don't know what your missing. For real.
Now comes the fun part, assemble those bad boys. I like to top mine with tomato sauce/ketchup and french's yellow mustard. Can't beat it.
