A breakfast muffin, yes please...

There is nothing better than a piping hot homemade muffin fresh from the oven for breakfast.
Just add my favourite hot or cold coffee and I am a happy girl.

Here are the banana and blueberry muffins that we gobbled up for breakfast on Saturday.

Here's what you'll need to make these for yourself:
2/3 cup milk
1/4 cup vegetable oil
1 medium ripe banana, mashed
1 egg
2 cups self raising flour
2/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup fresh or frozen blueberries, thawed

In a large bowl beat together the mashed banana, milk, egg and oil.

Add all the remaining ingredients except for the blueberries and mix to combine.

Now add the blueberries and gently fold through.

Divide the batter between 12 patty cases, and bake in a 200 degree oven (400 degree f) for 18 - 20 minutes.

Now marvel at the golden beauties you have just baked.

So delicious, quick and easy. Now go bake them and try not to eat them all at once!

Those sound so yummy! I love blueberry muffins, but the banana added sounds delightful! :)
