I don't know about you but I think there is something so great about a yummy loaf. It's perfect for a weekend breakfast, morning tea or afternoon tea. It also makes a great lunchbox treat. And this one is no exception.
I've always made banana and walnut, but the addition of coconut just makes it something super special. And it's so easy. If my 7 year old can make it, you can too!
Cream the butter, sugar and vanilla. Add the eggs, banana and milk and combine.
Now add the salt and flour, mix until it forms a nice creamy batter.
Then fold in the coconut and walnuts.
Pour into your loaf pan and bake in a 170c (350) oven for 1 hour 10 mins.
Allow to cool in the pan for at least 15 minutes before turning out.
Now go make it and enjoy it with a nice cup of your favourite drink in a comfy spot and savour the next few minutes.
