Pumpkin Scones...

I haven't eaten pumpkin scones in years. As a child I wouldn't eat anything that had pumpkin in it, I couldn't stand it. Then as an adult I ate them and I quite liked the flavour but they were too dry and crumbly. They needed some moisture! So I tweaked and tweaked until I got them just right. They are crumbly but moist and so tasty!

2 3/4 cup self raising flour
pinch of salt
1/2 cup brown sugar
1/2 cup thickened cream
1 cup mashed pumpkin (I just boil or steam it then mash it once cooled)
1/2 cup lemonade
milk to brush over

put the flour, salt and brown sugar in a large mixing bowl and stir to combine a little
then make a well in the centre

add the cream

the pumpkin

and the lemonade

mix together until a soft dough forms, it will be on the sticky side

turn out onto a well floured board or benchtop

knead the dough

press down until approx 2cm thick 

use a glass dipped in flour to cut out the scones

knead the dough back together and repeat until it is all used up

you will end up with an odd little handshaped scone no doubt

brush with milk and bake in a 220C oven for 15 minutes

I love mine hot and fresh from the oven with a little butter and some hot tea. So delicious!
